Vegan Banana Nut Bread Thursday, November 10, 2011


1 cup all purpose flour
1 cup whole wheat flour
1 tsp baking powder
½ tsp baking soda
¼ tsp salt
1 cup sugar
1 cup ripe bananas, mashed (about 2 medium bananas)
¾ cup silken soft tofu
¼ cup canola oil
1 tsp vanilla
1 cup chopped walnuts (optional)


In a mixing bowl, combine flours, baking soda, powder, and salt. In a separate bowl combine sugar, bananas, tofu, oil, and vanilla. Stir this mixture into the dry ingredients mixing just to blend. Fold in walnuts (if using). Pour into an 8x4 inch loaf pan which has been sprayed with baking spray. Bake at 350 deg about 50 to 55 minutes or until it tests done. Cool a few minutes in the pan before turning out.
