Cranberry Walnut Bread Wednesday, November 30, 2011

Ingredients

1 cup Milk
1/4 cup water
1 pkg dry yeast
1 egg
1 1/2 TBSP softened butter
3 TBSP honey
1/8 cup quick oats
1 tsp salt
1/4 tsp baking soda
1/4 tsp cinnamon
2 cups bread flour
2 cups All-purpose Flour
3/4 cup dried cranberries
1/2 cup chopped walnuts
2 TBSP melted butter

Directions

Pour milk and water into a small bowl and warm in microwave for 45 seconds to 1 minute (temperature should be approx. 105 - 110 degrees). Stir in the yeast and set aside for 5 minutes. Pour mixture into a large bowl and add the egg, softened butter and the honey. Mix well, then add the oats, salt, baking soda and cinnamon. Mix well. Add the flours one cup at a time, mixing well after each addition. Add the dried cranberries and the walnuts, and mix well. Turn out onto a floured board and knead for 5-6 minutes or until smooth and elastic. Place dough into an oiled bowl and let rise for 1 1/2 hours. Punch down dough and shape into a loaf. Place dough into a greased 9x5-inch loaf pan and let rise for 1 hour or until doubled in size. Preheat oven to 350 degrees and bake for 40-45 minutes or until golden brown. Immediately brush with the melted butter and turn bread onto a wire rack to cool.

I realize that this is a little more complicated than what we usually do. However, it is well worth the effort. This is one of the best breads I have tasted at Dollywood and they make a LOT of good bread.
