Pork and Potato Meat Loaf Tuesday, January 10, 2012


1 lb ground lean pork
½ lb pork sausage, hot, medium or mild
2 cups frozen hash browns, thawed
1 carrot, shredded
1 small onion, shredded
2 eggs
1 tsp salt
½ tsp black pepper


In a large bowl, place all ingredients. Using hands, mix until completely combined. Shape mixture into a loaf and place in a baking dish which has been sprayed with cooking oil spray. Bake in a preheated 350 deg oven about 1 hour or until golden brown. If loaf is pierced, the juices should run clear. Let loaf rest about 5 to 10 minutes before slicing to serve.
