1 ¼ cups buttermilk pancake mix
¼ cup vegetable oil
¼ cup sugar
2 cups chopped frozen cheesecake
1 ½ cups strawberries, hulled and sliced
¼ cups strawberry jam
Mix pancake mix, egg, oil, and sugar until it is just mixed. Stir in cheesecake pieces not breaking them up any more than necessary. Heat a nonstick skillet or griddle to medium heat and spray with cooking oil spray. Using about ¼ cup batter for each pancake pour the batter onto the prepared skillet and allow to cook until bubbly on top and starting to brown around the edges. Turn and allow to brown. Place onto a plate and place in a 200 deg oven to keep warm.
Mix strawberries, jam and enough warm water (about 2 to 3 TBSP) to reach the desired consistency. Serve over warm pancakes.
