1 lb small okra pods
olive oil spray
salt and pepper to taste


Wash okra pods to remove fuzz. Dry completely. Cover a large baking sheet with sides with foil and spray with olive oil spray. Scatter okra (uncut) evenly in one layer on pan. Spray with olive oil spray and sprinkle with salt and pepper to taste. Place into a preheated 400 deg oven. Roast about 25 minutes or until it is starting to brown and feels crisp. Stir after about 15 minutes.
