Easy Good Luck Soup Monday, December 28, 2009


4 or 5 slices hog jowl bacon, cut into small pieces
8 oz cubed ham
1 (6 ounce) package uncooked long grain and wild rice mix, with
seasoning packet
1 10 oz pkg chopped spinach
2 (15 ounce) cans black-eyed peas, drained
2 (14.5 ounce) cans diced tomatoes, with liquid
2 (14 ounce) cans chicken broth
2 cups water
salt and black pepper to taste


In a large pot, fry the bacon until crisp. Remove bacon with a slotted spoon. Thaw spinach and squeeze dry. Add to hot grease from bacon and stir until broken up. Stir in cubed pork. Add rice mix with seasoning packet, black-eyed peas, tomatoes, broth and water. Bring to a boil. Reduce heat to low, cover and simmer 20 minutes, or until rice is tender. Season to taste with salt and pepper. Sprinkle individual servings with the crisp hog jowl bacon just before serving.
