1 lb baby carrots, cut into half long ways
2 tsp olive oil
1/4 cup orange juice
1 1” piece of fresh Ginger, peeled and cut very fine
1 TBSP brown sugar
pinch of salt
1 TBSP crystallized ginger, chopped fine
In a non stick skillet, heat oil and cook carrots over medium heat about 5 minutes, stirring occasionally. Add orange juice, fresh ginger, salt and brown sugar. Stir to coat carrots. Reduce heat, cover and allow to cook an additional 5 minutes. Remove cover and cook and additional 2 minutes or until liquid is reduces and thick enough to coat carrots. Just before serving, sprinkle carrots with crystallized ginger.
