Blue Ribbon Broccoli Friday, January 15, 2010


5 cups broccoli florets, chopped
2 TBSP butter
3 oz cream cheese
2 TBSP flour
4 oz blue cheese, crumbled
1 cup milk
1 3 oz pkg fried onion rings


Blanch broccoli in boiling water and drain. Set aside. Place butter and cream cheese into a microwave proof bowl and run about 2 minutes on high or until butter is melted and cheese is soft. Stir together and whisk in flour and blue cheese. Whisk in milk and microwave on high about 2 or 3 minutes or until hot and thick. Whisk a couple of times while cooking to insure that it is smooth. Place broccoli in a two quart baking dish and pour sauce over and stir to combine. Sprinkle onion over the top and place in a 350 deg oven about 25 minutes or until bubbly and brown on top. Serve hot.
