Sweet and Sour Cabbage Soup Friday, January 22, 2010
Ingredients
1 TBSP olive oil
1 cup chopped onion
6 cup shredded cabbage
2 cans beef broth
1 14.5 oz can diced tomatoes
2 TBSP brown sugar
2 TBSP lemon juice
1 tsp salt
1/2 tsp black pepper
Directions
In a large sauce pan, heat oil and add onions. Saute over medium heat until golden brown, stirring frequently. Add all remaining ingredients and bring to a boil. Reduce heat and simmer, covered, about an hour, stirring occasionally.
As an interesting addition to this soup, add 1/4 cup of raisins and 1/2 tsp caraway seeds with other ingredients and proceed as above.
