Almost Italian Shepherd’s Pie Friday, February 12, 2010


1 1/2 lb lean ground beef
1 onion, chopped
2 cups marinara sauce
pinch of salt and pepper
1 Martha White Buttermilk Cornbread mix
1/4 cup grated Parmesan cheese
1/4 tsp Italian seasoning
1/2 cup milk
2 TBSP cooking oil


In a cast iron (or any heavy, oven proof skillet), cook beef and onion until meat loses its color and onion is translucent. Drain any fat. Add marinara sauce, salt and pepper and cook and stir until thickened. In a small bowl, combine corn bread mix, cheese, Italian seasoning. Stir in milk and oil and stir just until mixed. Spoon over meat mixture evenly and bake at 425 deg about 15 minutes or until golden brown. Serve hot in the skillet with a nice green salad.
