Chocolate covered Shortbread Cookies Wednesday, February 17, 2010


3/4 cup butter, softened
1/4 cup sugar
1/2 TBSP vanilla (optional)
2 cups Gluten Free all purpose flour (I perfer Bob's Red Mill)
1 container Dolci frutta chocolate shell (or other chocolate coating)- Food
city has Dolci


Heat oven to 350 deg. In a large bowl stir butter and sugar until well mixed. (Mix in vanilla if using). Stir in flour. (If crumbly, add TBSP butter). Roll dough 1/2" thick on lightly floured surface. Cut into shapes. Place on ungreased cookie sheet or parchment paper. (parchment paper perferred- cookies break less when taken off) Bake 20 minutes or until set. When cookies have cooled, prepare dipping chocolate as directed. Brush cookies on one side and let cool, then decorate to taste.
