1 1/2 cups milk
1 cup self rising corn meal mix
1/2 cup butter
2/3 cup sugar
1/3 cup lemon juice
grated zest from 1 lemon
2 to 3 cups berry(s) of your choice, sweetened to taste
Note: If fresh berries are not available, Food Club frozen berry medley will work nicely. Just thaw and sweeten to taste. If you do this, use the berries just as soon as they thaw.
Heat milk to boiling and stir in corn meal mix. Cook, stirring, until thickened. Remove from heat; stir in sugar and butter. Continue to beat until butter is melted. Beat in lemon juice and zest. Beat in eggs, one at a time and continue beating until fluffy. Turn into a greased 2 quart baking dish and bake in a preheated 375 deg oven about 35 to 40 minutes or until nicely browned. Serve hot with berries and juice spooned over the top.
