8 chicken thighs (with skin and bone)
1/4 cup olive oil
1/3 cup lemon juice
Salt and pepper
1 TBSP grainy brown mustard
1 TBSP honey
Mix the olive oil and lemon juice in a heavy, resealable plastic bag. Season chicken with salt and pepper and place in the bag. Seal and shake the bag to cover al the chicken. Allow to marinate in the refrigerator at least one hour, but overnight will work. Place the chicken, skin side down in a roasting pan which has been sprayed with cooking oil spray. Roast in a 425 deg oven about 20 minutes. Turn and return to oven about 10 minutes. Reset oven to broil. Mix honey and mustard and a pinch of salt and of pepper. Brush evenly over chicken and return to the oven for an additional 5 minutes. The juices which will accumulate in the pan make a nice sauce for the chicken.
