Onion and Cheddar Biscuits Thursday, February 25, 2010


1/4 cup finely chopped sweet onion
4 TBSP butter, divided
1/4 cup balsamic vinegar
2 cups self-rising flour
1 TBSP sugar
1/8 tsp cayenne pepper
1 cup cheddar cheese, shredded
1/2 cup (approx) buttermilk


In a small skillet, sauté onion in 1 TBSP butter until tender. Add vinegar and cook, stirring, until liquid is evaporated. Allow to cool. In a bowl, combine flour, sugar and cayenne pepper. Cut in remaining butter until mixture resembles coarse crumbs. Add onion mixture and cheese. Stir in buttermilk until mixture is just moistened enough to stick together. Turn onto a lightly floured board and knead just a few turns or until mixture is fully mixed. Pat or roll to about ½ inch thickness. Cut with a floured biscuit cutter. Place biscuits on a greased baking sheet, not touching. Bake at 400 deg about 12 to 15 minutes or until golden brown.
