Chicken and Broccoli Alfredo Monday, March 1, 2010

Ingredients

8 oz whole wheat fettuccine, uncooked
4 cups broccoli florets
1 14 oz jar Alfredo sauce
1 TBSP olive oil
1 lb boneless, skinless chicken breast, cut into 1 inch cubes
black pepper

Directions

Cook pasta according to pkg directions adding broccoli to pasta water during last 4 minutes of cooking. Heat oil in a large skillet. Add chicken and cook, stirring until golden brown and cooked through. Add drained pasta anc broccoli to skillet and toss to mix. Add alfredo sauce and stir to mix. Heat through. Turn into a serving bowl and grate black pepper over top. Serve hot.
