Ingredients
2 cups plain flour
2 cups old fashioned oats
2 tsp baking powder
1 tsp soda
1/2 tsp salt
1/4 cup sugar
1/4 cup butter, cut into small pieces
1 egg
1 1/4 cup buttermilk
2 cups raisins (optional)
1 egg yolk (optional)
Directions
Mix flour, soda, baking powder and salt. Cut in butter until it is fully incorporated into mixture. Stir in oats and raisins. Combine buttermilk and egg and stir into dry mixture to form a stiff dough. Turn out onto a lightly floured surface and knead a few turns until fairly smooth. Place in a round, 2 quart, greased baking dish. Cut a cross pattern into the top if the dough. If you wish, brush top with egg yolk. Bake in a 375 deg oven about 1 hour or until deeply brown. Cool a few minutes in the bowl before turning out to serve warm with butter.
