Bean and Pasta Soup Thursday, April 8, 2010


2 TBSP cooking oil
1 1 lb pkg mixed bean soup mix
1 onion, chopped
2 tsp each, garlic and dry oregano
2 15 oz cans diced tomatoes with Italian seasoning
1 8 oz can tomato sauce
1 cup uncooked pasta, any small variety
2 cups water


Wash and soak the beans according to pkg directions. In heavy saucepan with a good lid, sauté the onion and garlic until browned around the edges. Drain beans and add to onion along with the water called for on the package. Bring to a boil, reduce the heat to a simmer. Cover and cook until the beans are tender. Add all remaining ingredients (including the 2 cups of extra water) except the pasta and bring to a boil. Add the pasta and cook about 10 minutes or until pasta is just tender. Serve hot, sprinkled with Parmesan cheese. If the beans include a "flavor packet" you should decide for yourself if you wish to use it. Remember, it is mostly salt.
