Shrimp, Mango and Spinach Salad Thursday, April 29, 2010

Ingredients

9 oz pkg spinach, any large stems removed
1 large mango, peeled and cut into ½ inch cubes
1 lb medium shrimp, cooked, cooled and peeled
4 green onions, sliced

Dressing:
3 TBSP lime juice
2 TBSP olive oil
1 TBSP dark brown sugar
1 small jalapeno pepper, seeded and chopped
½ tsp cumin
¼ tsp each, salt and pepper

Directions

Whisk together all dressing ingredients and reserve. Place spinach in a large serving bowl. Stir in mango cubes, shrimp, and green onions. Drizzle with dressing and serve.
