½ cup rice wine vinegar
¼ cup vegetable oil
6 TBSP creamy peanut butter
3 TBSP soy sauce
3 TBSP brown sugar
1 TBSP minced fresh ginger root
1 1/2 TBSP minced garlic
1 16 oz pkg coleslaw mix
1 red bell pepper, thinly sliced
1/2 cup matchstick carrots, chopped
6 green onions, chopped


In a medium bowl, whisk together the rice vinegar, oil, peanut butter, soy sauce, brown sugar, ginger, and garlic. In a large bowl, mix the slaw mix, red bell pepper, carrots, and green onions. Toss with the peanut butter mixture just before serving.
