Cola Slow Cooker Pulled Beef Monday, May 31, 2010


2 ½ to 3 lb lean, boneless beef roast (chuck, top round, bottom round etc.)
1 medium onion, chopped
1 cup cola (I use regular Coke)
¼ cup Worcestershire sauce
1 TBSP cider vinegar
½ tsp dry mustard
½ tsp chili pepper
¼ tsp ground red pepper
½ cup ketchup
Hamburger buns


Trim just as much fat as possible from roast. Combine roast and onions in a crock pot. Combine cola and the next 5 ingredients. Reserve and refrigerate half of this mixture. Pour remaining mixture over roast. Cover and cook on high at least 6 hours or until roast can be pulled apart easily with two forks. Drain and shred roast. Keep warm. Combine reserved half of cola mixture with ketchup and cook over medium heat, stirring constantly until mixture is just heated through. Pour over shredded roast and stir to mix. Serve on hamburger buns.
