Ingredients

A Splash Country Recipe

Tostitos
3oz shredded lettuce
1oz shredded cheese
2oz tomatoes
1oz shredded carrots
3 slices of cucumber
2oz onion and bell pepper mixture
2oz fajita chicken
2oz Southwestern dressing

Directions

On a 9 inch plate, place about 8 to 10 Tostitos on the bottom. Place 3oz of shredded lettuce on top of the Tostitos, then 1oz shredded cheese, 2 oz tomatoes, 1oz shredded carrots, 2oz sautéed onion and pepper mixture, 2oz fajita chicken, 2oz Southwestern dressing. Place the cucumbers around the finished salad as well as more Tostitos around the edge of the plate.

Leftover rotisserie chicken dusted with a little taco seasoning is great for this salad.
