New Fashioned Country Green Beans with New Potatoes Thursday, July 8, 2010


3 lbs green beans (white half runners are the best)
1 medium onion, chopped
2 TBSP canola oil
1 lb small white new potatoes
1 cup water (approx)
salt to taste


Wash, string and break the green beans into pieces about an inch long. Wash again. In a large pot with a tight fitting lid, heat and oil and add the onion. Cook, stirring, until the onion is translucent. Add the green beans and the water and stir to mix. Bring to a full boil and reduce the heat to a simmer. Cover and allow to cook about an hour. Wash and add the potatoes on top of the beans. If your potatoes are large you may cut them into quarters. Cover and allow to cook about another hour or until the potatoes are tender. Remove the potatoes and add salt to taste. If there is much water in the beans, increase heat and allow them to boil until almost all the water is gone. Serve hot.

What makes these beans new fashioned is that we left out the salt pork and substitutes the onion and the slight amount of a good oil. They are not traditional, but they are good.
