Bran Prune Muffins Friday, March 1, 2013

Ingredients

1 ½ cups all bran cereal
1 cup self rising flour
16 whole pitted prunes
½ cup sugar
¾ cup buttermilk
¼ cup vegetable oil
2 eggs
1 tsp vanilla

Directions

Process cereal in food processor with metal blade until finely chopped. Add all remaining ingredients. Pulse 3 or 4 times. Open bowl and scrape down. Pulse 2 or 3 more times. Bake in 12 regular muffin pans which have been sprayed with baking spray. Bake at 375 deg about 20 minutes or until browned.
