1-2 bunches fresh kale, washed, trimmed and dried
1-2 teaspoons kosher salt
1-2 teaspoons garlic powder (not garlic salt!)
1/2 teaspoon freshly cracked black pepper
olive oil cooking spray
1. Preheat oven to 350F.
2. Remove all the ribs from the kale, and tear into large bite-sized pieces (they'll shrink a good bit). Lay the kale pieces on a couple of baking sheets in a single layer. Making sure the kale is dry, spray a fine, even layer of the olive oil over the kale. Turn leaves over and lightly spray the second side. Sprinkle the leaves with the kosher salt, black pepper and garlic powder.
3. Bake in preheated oven at 350 for 15-20 minutes, or until kale is crispy. You can stir them halfway through if you'd like. Don't over cook!
