Ingredients

¾ cup butter
½ cup sugar
3 eggs
grated zest of 1 lemon
3 medium apples, peeled, cored and chopped
1 ½ cups flour
¼ tsp salt
1 ½ tsp baking powder

Directions

Cream the butter and sugar and beat in eggs, one at a time. Stir in lemon zest and apples. Mix together the dry ingredients and fold into apple mixture until blended. Pour into an 8” square pan which has been sprayed with baking spray. Bake about 30 minutes in a preheated 375 deg oven. Serve warm.
