Quick Fruit Cobbler Tuesday, April 16, 2013
1 16 oz bag frozen fruit (cherry berry mixed fruit is a favorite)
½ to ¾ cup sugar (or Splenda)
1 pkg Martha White blueberry biscuit mix
Spray a mid-size pie plate or flat casserole dish with cooking spray. Allow berries to thaw and, using a heavy pan, add sugar and bring to a boil. Pour into prepared dish. Prepare biscuit mix according to pkg directions and drop by spoonfuls onto hot berry mixture. Bake in a 375 deg oven about 20 minutes or until biscuits are browned and mixture is bubbly.
This can also be done nicely by using apple pie filling instead of the berries with a cinnamon biscuit mix. I like Comstock apples with no sugar added for this.
