Sauteed Sweet Potatoes Wednesday, July 24, 2013

Ingredients

2 Cups Small Diced Sweet Potatoes
1/2 Cup Chopped Bacon
1 Cup Small Diced Onion
1 TBSP Minced Garlic
1/2 Cup Cider Vinegar
1/4 Cup Brown Sugar
1/2 Cup Chopped Cilantro
1 Cup Water
Salt & Pepper To Taste

Directions

Render the bacon over high heat until almost crisp. Add sweet potatoes and cook for 2 minutes. Add onions and cook until translucent. Add garlic then add vinegar, water and brown sugar. Cook until syrupy and potatoes are cooked through. Take off heat and allow to cool for about 10 minutes. Stir in cilantro. Season with salt and pepper and serve warm either as a side dish or over grilled chicken.
