Tennessee Valley Farms Grass Fed Beef with Squash Friday, August 3, 2012

Ingredients

1 lb 100% Tennessee Valley Farms Grass Fed Beef
3 or 4 medium yellow summer squash or green zucchini (or a combination of both)
1 tsp minced garlic
1 medium onion, diced
3 large tomatoes, peeled and diced
1-2 tsp Worcestershire sauce (or to taste)
1 tsp oregano
1 TBSP fresh basil, chopped
Salt and pepper to taste
Freshly grated Parmesan or Romano cheese

Directions

Peel (optional) squash and slice into thin rounds in food processor or by hand. In a large skillet, brown ground beef over medium-high heat. Drain excess fat.
Push beef to one side and saute diced onion and minced garlic. Mix onions & garlic and ground beef together. Mix in squash slices. Stir in diced tomato. Add worcestershire. Simmer 10 - 15 minutes or until squash is soft. Stir in basil and Oregano.Serve over brown rice or whole wheat couscous and top with freshly grated Parmesan or Romano cheese
