Mothers Day----- "Breakfast in Bed”
Eggs in a Nest
½ stick butter ½ stick margarine
1 loaf French Bread ½ dozen eggs
In a skillet place butter & margarine on low heat until melted. With a cookie cutter cut holes from the center of each slice of French Bread Cut into 3” pieces.
Crack 2 eggs into each hole. Increase heat to medium & Pan Fry the eggs until done.
You may also use Bagels or Texas Toast to make these eggs.
Serve with Ketchup, syrup or hollandaise sauce*.
*Blender Hollandaise
1 stick melted butter
2 teaspoons lemon juice
4 egg yolks
Dash cayenne pepper
2 teaspoons hat water
In a blender add all ingredients & puree for 30 seconds.
Serve Immediately.

Cake:
2 c. flour (all-purpose)
1 tsp. vanilla
1 c. sugar
1 tsp. baking soda
1 – 8 oz. carton sour cream
1/4 tsp. salt
1/2 c. butter
2 c. peeled chopped apples (yellow)
2 eggs
Topping:
1/2 c. chopped nuts
1 tsp. cinnamon
1/2 c. firmly packed brown sugar
2 tbsp. butter
Heat oven to 350 degrees. Combine all cake ingredients in a large bowl except apples. Beat at medium speed scraping bowl often. Fold in apples. Spread batter into well-greased 13 x 9 pan. In a small bowl, combine topping ingredients. Sprinkle over batter. Bake at 350 degrees for 30 to 40 minutes or until topping is dark cinnamon brown.
Mother’s Day Mimosas
1 cup fresh squeezed Orange juice
1 cup champagne or sparkling juice
Spritz of raspberry liqueur
Potatoes Au Gratin
5 whole potatoes, sliced, boiled, & drained
½ c. swiss cheese ½ c. cheddar cheese
½ c. sour cream ½ c. half and half
Put into casserole dish as in order above and bake for 1 hour on 300 degrees.
