Potatoes and Sausage Dish
1 lb. Sausage, sliced and fried in 2 tbsp. Fat
2 medium onions, chopped
1/2 c. green pepper, chopped
1 clove garlic, minced
1/2 c. red pepper, chopped
Salt to taste
Pepper to taste
Sauté the above vegetables
3 or 4 boiled potatoes, sliced
4 eggs beaten with 2 cups of milk added
Grated Swiss cheese
Layer all ingredients into baking dish and top with cheese.
Bake at 350 degrees for 30 minutes.
Mimi’s Mashed Potatoes
6 medium potatoes, diced and peeled
2 c. water
1 stick butter
1/2 can evaporated milk
2 tsp. Salt
1/4 tsp. White pepper
Bring potatoes to boil, cook until soft. Drain well. Place back in sauce pot; add 1 stick of butter, 2 tsp. Salt, ¼ tsp. white pepper, and ½ can evaporated milk. Whip with an electric mixer until fluffy.

Home Style Potato Chips
Wash and dry 6 medium potatoes (do not peel). Slice thin. Deep fry in large skillet full of shortening until crispy golden brown.
Potato Sticks
Peel 6 to 8 medium potatoes and shred finely. Add 1 c. sour cream, 1 c. grated cheddar cheese, ½ c. flour. Mix together and roll out into sticks. Roll in beaten egg and flour until coated and deep fry. Dip in homemade blue cheese dressing or cheese sauce.
Fried Potato Skins
6-8 Hulls from baked potatoes. Deep fry hulls, as soon as removing hulls from deep fryer, sprinkle with grated cheddar cheese and crumbled bacon bits. Serve with sour cream and chives.
Baked-Fried Potato Cakes
Use left-over baked potatoes, 3-5 potatoes. Scrape out potato filling and mash with fork or potato masher. Add 1 c. sour cream, ½ c. cheddar cheese, 2 tbsp. buttermilk, 1 c. flour. Mix together and spoon into hot greased skilled. Fry until golden brown; flip; and fry until done. Serve with ketchup.
