Patriotic Hero Sandwiches
1 large loaf French bread sliced horizontally.
Spread: mayo, mustard, pesto & olive oil over both bread slices thick & evenly.
Layer Deli sandwich meats & cheeses, top with your favorite sandwich sliced pickles & cut in 3 inch pieces. Roll in paper towels keeping the form & then in foil. Refrigerate overnight or place in a cooler for at least 6-8 hours before serving.
* When ready to serve add a sparkler & light!
Maple Teriyaki Salmon Burgers with homemade Tarter Sauce
1/3 c. apple juice 1/3 c. maple syrup
3 tbsp. soy sauce 2 tbsp. onion, finely chopped
2 garlic cloves minced 4 salmon fillets – about 2 lbs.
Combine first 5 ingredients. Remove 1/2 c. for basting. Marinate 1 to 3 hours. Broil or grill.
Serve on a Grilled Wheat Bun
Tarter Sauce:
½ cup mayo ½ cup sour cream
3 tlbsps. Sweet relish
1 carrot diced small
4 spoons minced onion dash sugar
dash salt & pepper dash lemon juice
Mixed Green Salad with Honey Mustard Dressing
Toss a variety of mixed baby greens.
Add:
chopped onion
chopped cucumber
sliced mushrooms
grape tomatoes
snap peas
grated mozzarella cheese
Honey Mustard:
1 cup yellow prepared mustard
½ cup mayo
2 cloves minced garlic
¼ cup olive oil
½ cup Honey
Mix well with a whisk & serve Cold or Hot
Shortbread Party Cookies
1 c. sugar
1/3 c. nonpareils
1/2 c. butter, softened
1/4 c. shortening
1 tsp. vanilla
2 eggs
1-1/2 c. all-purpose flour
1 tsp. baking powder
3/4 tsp. salt
Combine sugar, butter, shortening, vanilla, and eggs; beat well. Combine flour, salt and baking powder together. Add to sugar mixture and mix well. Stir in candy sprinkles (nonpareils). Cover with plastic wrap and store in refrigerator overnight.
When ready to bake, heat oven to 400 degrees. Turn cookie mixture onto a floured surface. Divide dough into 3 parts. Roll out dough and cut into desired shapes. Place on ungreased cookie sheet, 1 inch apart; and bake for 5 to 7 minutes. Remove from pan and let cool. Then ice.
Icing:
3/4 c. butter, softened
2 to 3 drops food coloring of your choice
2 c. confectioners sugar
1 egg
1 tsp. vanilla
Cream together: butter, confectioner’s sugar, vanilla, egg, and food coloring until smooth and fluffy. Spread on cookies. Please refrigerate the iced cookies.
Peaches & Blueberry Pie
2 cups peeled sliced peaches
2 cups fresh blueberries
½ cup minute tapioca
1 cup granulated sugar
1 spoon vanilla extract
stir together & mix well
place into refrigerated pie crust & bake 40 minutes on 350°
Sweet Mango Tea
Place 4-6 black tea bags in 4 cups boiling water
Allow to steep & brew about 15 minutes. Dilute with ½ gallon cold water.
Add:
1 cup mango nectar
½ cup granulated sugar.
