Thanksgiving Side Dishes

Corn Pudding - 12 servings
Ingredients
1/3 pound butter (softened)
1/2 C. flour
1 & 1/2 Tbls Salt
1/4 tsp. White pepper
1/2 C. sugar
10 eggs
7 C. Half & half
8 C. Sweet corn (if using frozen simmer to thaw and soften)

Blend butter, flour, sugar & salt until light and fluffy.
add eggs one at a time while mixing.
Stir in corn and half & half, mix very well.
Butter and lightly flour a large casserole dish.
Pour in batter and bake at 325 degrees until just set in middle and golden brown on top.
Almost an hour.

Sweet potato au gratin
Ingredients
3# sweet potatoes (peeled and very thinly sliced)
3 1/4 C half & half
1 1/4 tsp. salt
1/2 tsp. black pepper
1/4 tsp. nutmeg
1/2 C grated swiss or other cheese

mix together and pour into a buttered casserole.
press the potatoes gently to submerge in the liquid.
cover and bake at 325 degrees until potatoes are tender. (50 min)
then uncover top with cheese and bake until liquid is absorbed and cheese has melted and is golden brown.( aprox. 20 to 30 min.)

Apple and Walnut Dressing
Ingredients
8 C. Dried cubes of bread (or store bought)
1/2 stick butter
1 large onion (chopped)
2 celery ribs (chopped)
1 large apple (peeled, cored and diced)
1 C. lightly toasted Walnuts
1 1/2 tsp. rubbed Sage
1 tsp. dried thyme
1 tsp. salt (more or less to taste)
1/2 tsp. black pepper
1 1/2 C. turkey or chicken stock

Place dried bread in a large mixing bowl
in a sauce pot melt butter,
add onion, celery and cook 5 minutes.
add apple and cook 5 min more.
add all remaining ingredients.
let cool for 5 min.
pour over bread and mix well.
taste for seasoning.
put mix into a buttered 3 qt. baking dish drizzle with some more stock
dot with more butter,
cover and bake at 325 degrees for 20 min.
then uncover and bake 10 min to crisp up the top.

Cranberry relish (quick and easy)
Ingredients
1# Fresh cranberries
1 seedless orange (do not peel, cut into chunks)
1 C. sugar

place all berries and orange in a food processor.
mince together.
add sugar and mix well.
best if made 2 to 3 days in advance. ( lasts for about a week)
