David Dick’s Recipe for Cooking Hams
-from “The View from Plum Lick”
6 cups flour
1 ½ cups brown sugar
3 TBL of cinnamon and cloves
1 ½ tsp of black pepper
2 TBL dry or prepared mustard
Use enough water to make a soft dough with the flour. Knead flour and all other ingredients and roll out as large as you can. Have your ham cleaned and hock cut off, skin trimmed. Place ham in dough and wrap around ham until all is covered well, pinch all holes until none are left. Place in baking pan and cook 350 degrees until done. Bake 20 minutes per pound of ham. After the ham is done, peel off the bread. Store tightly in saran wrap and place in the refrigerator for up to three days.
