1 pound green beans, ends snapped
2 Tbsp. Extra Virgin Olive oil
2 Tbsp. fresh lemon juice
1 garlic clove, minced
1 Tbsp. fresh dill, minced
salt and freshly ground black pepper
Feta Cheese, crumbled – amount to taste.
1. Steam or cook the green beans until tender- about 10-12 minutes some times longer for more mature beans. Plunge into ice water.
2. Whisk the olive oil, lemon, dill and garlic together with salt and pepper.
3. Put the beans in a nice bowl, drizzle with the dressing and top with crumbled cheese.
