Healthy Individual Egg Quiche

1 pint egg whites

5 whole eggs

1 package frozen spinach, thawed and drained

10 slices of fresh Canadian bacon or about 1 cup

15 oz part-skim Ricotta cheese

1 cup low-fat Swiss cheese

½ cup chopped Green onion

Salt and Pepper to taste

1 Tbl flour

Mix all ingredients and ladle into individual muffin cups. Bake at 350 for 20-25 minutes.
