1 tbl olive oil
1 tbl Ginger
3 cloves Garlic
1 tbl Green Curry
2 breast Chicken cut into bite size chunks
2 cups Broccoli
1 Red Bell Pepper sliced
1 can Light Coconut Milk
Garnish: Basil, green onion
Heat olive oil over med-high heat, sauté ginger, garlic and curry for about 1 minute. Add chicken, broccoli and red bell, sauté for about another minute. Add coconut milk and simmer for about 10 minutes. Garnish and serve with Jasmine rice.
