Sprinkle kale with olive oil, salt and pepper and massage thoroughly. Spread onto a cookie sheet. Bake at 300 degrees for 20-25 minutes.
For dipping sauce – Combine 2 tblsp of mayo, 2 tblsp sour cream, lemon juice, lemon zest and a pinch of kosher salt.
