Little Citrus Pies with red white & blue topping
*10 Cookie dough mini Shells
*1 cup citrus curd
*Fresh raspberries, Blueberries & Crème sauce
(crème sauce can be whipping cream, yogurt, etc…)
Lemongrass & Ginger Grilled Chicken with
Mango Peach Salsa
*4-6 Chicken breasts trimmed & washed
Marinade 1 hour in equal parts ¼ c Lemon Juice & Grape seed Oil
3 teaspoons each Ground ginger & lemongrass. Remove chicken form marinade & grill 25 min on each side @ 375°
Salsa: 1 mango cubed, 1 peach cubed, 1 can black beans & I can whole kernel corn drained & washed 1 each; green, red, yellow & orange bell pepper diced, 1 red onion diced. Stir with a pinch of cumin & ½ cup olive oil. add ½ cup chopped fresh cilantro. Chill while chicken is marinating.
Watermelon & Strawberry Salad
2 cups watermelon heart cubed, 1 cup fresh mozzarella cheese cubed, 1 pint strawberries cubed, 2 teaspoons grape seed oil, ¼ cup fresh mint & 2 tablespoons lime juice. Stir gently & chill for at least 1 hour.
Rosemary Potato Salad
Scrub & cube 5lbs. Yukon red potatoes, boil until done. Grate 12 boiled eggs, 1 green bell pepper, 1 large white onion, 6 stalks celery diced. 2 cups mayonnaise, 1 cup sour cream. 1 teaspoon celery salt 1 teaspoon turmeric., Salt & pepper. Add 4 sprigs fresh rosemary. *This recipe can be cut in half. OR store in frig up to 1 week.
Blueberry Bread Pudding with Bourbon Butter sauce
4 leftover Blueberry muffins & 1 old loaf of bread cut up. Scramble & Add 1 cup ½ & ½, 6 eggs, sprinkle with ½ cup sugar. Pour into greased casserole dish Bake @ 350° for 20 minutes. Cool & cut up in to small pieces Add 1 cup fresh blue berries.
Sauce: 1/2 cup good bourbon, 1 can evaporated milk 1 stick real butter, 2 cups sugar. Cook over med-hi heat on stove top stirring until thickened, pour over pudding & serve warm. Store in Frig for up to a month, just re-heat as needed.
