• Chicken breasts, thinly sliced
• Egg wash – 1 egg with a tablespoon whole milk
• Panko bread crumbs
• Italian seasoning
• Grated parmesan cheese
Mix together bread crumbs, Italian seasoning and cheese. Dip chicken in the egg wash, then coat with bread crumb mixture. Place in a skillet on medium-high heat for 3 minutes per side. Finish in the oven at 350 degrees until cooked through.
Remove chicken from the oven and top with your favorite red sauce and a slice of fresh mozzarella cheese. Put a lid on the pan and put it back in the oven just until cheese is melted.
Top with fresh basil leaves and additional parmesan cheese.
Serve with linguini or spaghetti.
