Country ham dinner pairs AZUR Restaurant & Patio chef with author Steve Coomes Nov. 12

Author Steve Coomes will bring stories of the timeless Southern tradition of country ham to a special dining event at AZUR Restaurant & Patio Wednesday, Nov. 12 at 7 p.m. AZUR chef Jeremy Ashby, inspired by recipes in Coomes’ recently released book Country Ham: A Southern Tradition of Hogs, Salt & Smoke, has created a four-course menu highlighting the Kentucky delicacy. An avid cook of cured meats, Ashby will prepare some of world’s best aged pork while Coomes gives diners the rub on the regional history of country ham and its ascent from blue-collar staple to fine dining feature. The cost is $45.95 per person, plus tax and gratuity. Guests can also purchase a personalized copy Coomes’ book for an additional $15. The country ham dinner menu includes:

First Course
Sautéed chicken livers with country ham, caramelized onions, Marsala wine and sage sauce and crackling cornbread crostini
Inspired by Volare chef Joshua Moore’s vitello saltimbocca with a Kentucky taste (Louisville, Ky.)

Second Course
Nashville hot-style fried quail stuffed with country ham and cheddar with sweet and sour greens, tomato-pepper jelly and hot fries
Inspired by The Hamery’s cheddar and ham cheese ball (Murfreesboro, Tenn.)

Third Course
Butter-braised cabbage with smoked country ham hocks and kimchee over potato-Gruyere puree and caraway-dusted chicharron
Inspired by Harper’s Country Ham’s ham hocks and cabbage dinner (Clinton, Ky.)

Fourth Course
Sweet and savory country ham-infused ice cream with sweet potato biscuits, sorghum and roasted apple caramel
Inspired by chef John Varanese’s sweet potato biscuits (Louisville, Ky.) and Feast BBQ chef Ryan Roger’s country ham ice cream (New Albany, Ind.)

Lexington’s Women Chefs Dinner Series continues with a “Women in World Cuisine” dinner at Brasabana, 841 Lane Allen Road, Tuesday, July 22 from 6 to 8 p.m. The six-course dining event, which focuses on global cuisine, is the fourth in the series highlighting the talents of women chefs in the area. A portion of the proceeds from the dinner will be donated to the Children’s Advocacy Center of the Bluegrass, a nonprofit organization dedicated to reducing trauma for child victims of sexual abuse. Suite 550, will host Red, White & Bourbon Thursday, July 3 at 6:30 p.m. The urban camping-themed event, presented with the Lexington Bourbon Society, will feature campfire-inspired dishes created by chef Jeremy Ashby like campfire-style shrimp boil; apple-smoked pork belly with baked beans; wood fired baked trout with country ham piccatta butter; and s’mores bars. Signature summer bourbon cocktails from Buffalo Trace and Jim Beam will also be available. The cost is $40 per person, or $25 for Lexington Bourbon Society members, plus tax and gratuity.
