A Taste of the 18th Century
9:00 A.M.-5:00 P.M.
Ever think about what food was like in 18th century Kentucky? You need wonder no longer.
Brook & Barbara Elliott, proprietors of Historic Foodways, will once again be passing out samples of colonial style foods during the Winter Trade Days, at Fort Boonesborough SP, November 30-December 1.
“Adapting foods from that period can be quite an adventure,” notes Barbara Elliott. “They liked bold flavors in those days, much stronger tasting than we do. The trick becomes adapting the foods so they are pleasing to the modern palate while staying true to the original flavor profile.”
The Elliotts will have samples of four dishes of the era: Pease Soup, Sweet Potato Buns, Red Cabbage with Sausages, and Chicken Mumble. The recipes for these can be found in their two books on colonial cooking: A Colonial Virginia Book of Cookery and A Colonial Virginia Book of Cookery Second Table, which they’ll have available for sale.
“Each of our recipes has been adapted from original source material,” Elliott says, “some of which date back to the 1600s.” In each case they’ve been proven on live fires and in the home kitchen, she adds. Why both? “So if people want to experience these foods they can prepare them at home, without having to kick off a fire in the backyard.”
Long time living historians who’ve specialized in the foodways of the southern Colonial and early Federalist periods, the Elliotts will be on hand to discuss the historical aspects of food, gardening, and the many uses of herbs in early Kentucky.
In addition to their cookbooks, the Elliotts will have other historically-based products for sale, including seeds of period vegetables, organically grown herbs and herbal products, and, their latest product, a line of herbal vinegars.
Winter Trade Days will take place at the Fort, November 30-December 1. The gates open at 9:00 am each morning, and continue until 5:00 pm.
