Noodles & Company is working hard to be green

Noodles & Company, serving noodles and pasta dishes from around the world, today announced that its first restaurant in Lexington will strive to be green. Owned and operated by local resident Chad Colony, Noodles & Company will be located at 2468 Nicholasville Rd.
“Noodles & Company of Lexington has gone to great lengths to ensure that this restaurant will be environmentally friendly,” says Chad Colony, local owner and resident of Lexington. “Having trained in many restaurants, I have always been taken back by how much waste is thrown away and how much energy is lost by not taking simple measures. When I envisioned my restaurant, I knew we could be different. It has taken extra time and extra money, however, I am really excited and proud for how the end result is looking.”
Noodles & Company Lexington is committed to recycling, energy reduction, waste reduction and water conservation. Noodles & Company partnered with Bluegrass Greensource in order to learn how to maximize their conservation efforts.
“Bluegrass Greensource was a great resource for me to learn the many ways that we could help in our conservation efforts. For example, in the parking lot we are replacing all of the old metal halide lamps and replacing them with LED lights. This alone will take the energy use from 400 watts to 90 watts per fixture. In addition, we placed timers on each light so that they will reduce their output by 75% during non-peak times. We are also initiating a recycling program for all cardboard, aluminum, steel and glass. In addition, we use all real china which drastically cuts down on waste. Lastly, all the equipment and fixtures were selected with conservation in mind.”
Noodles & Company brings its globally inspired menu featuring the most popular classic noodles and pasta dishes together under one roof to create “Your World Kitchen.” Always fresh and made-to order, its dishes range from healthful to indulgent and spicy to comforting. Using some of the most celebrated flavor combinations in the world, there is something for everyone, from kids to adults. Favorites include the sweet and spicy Japanese Pan Noodles, savory chicken lettuce wraps, creamy Penne Rosa, zesty Pesto Cavatappi, and rich Wisconsin Mac & Cheese. To complement each dish, Noodles & Company also serves wines from around the world and beers from down the block.
“I am so excited to be opening the first Noodles and Company location in Lexington,” said Chad Colony, President and owner of Invictus, LLC. “Every dish is customizable to please even the
pickiest eaters with numerous choices combined at the guest’s request. There are no freezers or fryers in the restaurant and every dish is prepared fresh to order. We look forward to serving the people of Lexington and surrounding areas and we are proud to do so with conservation and sustainability in mind. ”
Chad Colony plans to open 5 Noodles and Company restaurants in Lexington and surrounding counties. Invictus, LLC plans to hire over one hundred employees in coming years. “As a resident of Lexington, I am proud to be able to launch Noodles and Company and create jobs within our community. As a local business owner, I am encouraged to see my tax dollars and profits stay within the great city of Lexington,” said Chad Colony.
