LEXINGTON, Ky. (WKYT) - A second Wild Eggs restaurant is scheduled to open in mid-December in Hamburg Place, officials announced on Monday.
Construction is underway on a location at 1925 Justice Drive next to Malone’s. The first Lexington location, 3735 Palomar Center Drive, opened in February. Since opening Wild Eggs Palomar, demand has been high for a second location.
The Lexington Wild Eggs locations are owned and operated by Golden Eggs, LLC a Lexington company with experience in management of multi-unit retail and restaurant brands.
Golden Eggs has committed to opening 10 Wild Eggs locations in and around Central Kentucky, Eastern Kentucky and Eastern Tennessee with a focus on Lexington, Knoxville and Chattanooga.
The Hamburg location, expected to be 3,900 square feet, will seat over 130 people, including patio space.
“Wild Eggs Palomar has far exceeded our expectations,” Jay Hall, president of Golden Eggs, LLC., said in a release. “We hear from our guests all the time that they’d like to see us open another Wild Eggs in Lexington. We are excited about our growth plans and looking forward to the challenge.”
Wild Eggs Hamburg is hiring for all front and back of house positions. The restaurant plans to hire 50 new employees before the December opening.
Wild Eggs, which opened in Louisville in 2007, has four locations in Louisville, one in Lexington, one in Bowling Green and another in Denver, Co.
